As long as Mother Nature cooperates for the rest of season, we will have an excellent crop.” The chile I bought from Chimayo last year was so hot, it peeled the roof of my mouth. Gotta find some milder variety this year. Go Chimayo rather than Hatch. Hatch grows hybrids, Chimayo is more a traditional, ‘heirloom’ product.
