Susan Purdy brings high-altitude baking down to Earth. We’re a half-mile higher than Denver here in Santa Fe. Most of my friends back East think Denver’s the highest city around ("mile high"), and the stereotype’s nearly impossible to break. Baking is a unique challenge at high altitude, but even regular convenience foods take longer to cook. Throw a passel of tater tots in the oven for the recommended cook time, and you’ve got raw potatoes coming out. Double the cook time, at least. Very few things are ‘fast’ foods, up here.

I remember flying into Santa Fe from Denver some time ago and after we touched down the pilot said “Welcome to the the mile-and-a-half high city!”
